- Ingredients:
- 1 cup couscous
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 zucchinis, sliced
- 1 sweet potato, peeled and cubed
- 1 bell pepper, chopped
- 1 cup cabbage, shredded
- 1 cup pumpkin or butternut squash, cubed
- 1 can chickpeas, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley for garnish
- Instructions:
- In a large pot, sauté onions in olive oil until softened.
- Add vegetables, chickpeas, and spices. Cook for a few minutes.
- Pour in enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer until vegetables are tender.
- Prepare couscous according to package instructions.
- Serve the couscous topped with the vegetable mixture and garnish with fresh parsley.
